Salad Mix with Salad Turnips

Yields1 Serving

5-8 ounces salad mix or torn up red butterhead lettuce

2-3 small or 1 large salad turnip, cut in half and then thinly sliced

1-2 scallions, minced

1 garlic scape, minced (optional, this will make the salad spicier)

2-3 tablespoons or your favorite balsamic vinaigrette

Salt and pepper to taste

In a large bowl, add the scallions, garlic scape (if using), a little salt, pepper and the vinaigrette.

Add the salad greens and lightly toss to evenly coat.

Divide among plates and top each salad with the turnips.

Lightly salt and pepper if needed.
