Boil the kale in plenty of water for 3 minutes. Drain in a colander, rinse with cool water and squeeze dry.
Heat the oil in a large skillet, add the garlic and fry for 30 seconds, add kale, radish tops and bulbs and remaining ingredients.
Toss to blend, add more of either seasoning to achieve a sweet, sour, and salty balance.
