Apple, Kohlrabi, and Hazelnut Slaw

1 large apple or pear, cored and cut into matchsticks

1 medium kohlrabi peeled and cut into match sticks, or broccoli stems, thinly sliced

1/4 cup finely chopped red onion

1/4 cup toasted chopped hazelnuts, walnuts, pecans, or almonds

1/4 cup hazelnut oil, olive oil, or another nut oil

1 T apple cider vinegar

2 t honey

1 t whole grain mustard

Pinch of crushed red pepper flakes\1/4 cup finely chopped parsley, plus additional for serving

Hefty pinch of salt


1In a large bowl, mix all the ingredients and toss to combine. Garnish with additional parsley, if desired, and serve.
