Celeriac Carrot Slaw


1 large or two small celeriac bulbs

2 large carrots

2 cloves of garlic or 1 medium shallot

2 tblsp of any type of vinegar (white, red wine or apple cider, lemon juice also works)

¼ tsp salt

2 tsp Dijon mustard

1/3 cup olive oil

1 tblsp sour cream (plain yogurt works as well)

fresh ground black pepper to taste


1Peel celeriac with a sharp knife. Grate with a cheese grater or food processor. Peel carrots and grate the same way. You are shooting for about 4 cups of grated carrot and celeriac.

2 Mix minced garlic or shallot, vinegar, salt and mustard in small bowl.

3 Whisk in olive oil until smooth and thickened.

4 Stir in sour cream or yogurt and fresh ground pepper to taste. Add more salt if necessary.

5 Pour over grated vegetables and toss gently. Allow to marinate for 30 minutes.
