Beet Chocolate Cake
2 cups Sugar
1/2 teaspoon salt
1 teaspoon baking soda
2 cups flour
2 teaspoons baking powder
1/4 cup oil
3 cups shredded beets
3-4 ounces unsweetened chocolate
1Preheat oven to 325 degrees F.
2 Combine dry ingredients. Sift or mix well together.
3 Melt chocolate very slowly in a double boiler.
4 Allow chocolate to cool, then blend thoroughly with eggs and oil.
5 Combine flour mixture with chocolate mixture, alternating with beets.
6 Pour into 2 greased 9 inch cake pans. Bake at 325 for 40-50 minutes, or until a fork can be removed from the center cleanly.
